Here is my objective take on it:
It doesn't look appealing, I don't care if the fat has been rendered or not (it seems to be a certain continent that complains about that).
I'm not used to chicken skin being served that way but I would try it anyhow.

Perhaps the simplicity is what makes it popular?
It's not my 'cup of tea' but I won't knock it, until I've tried it.

Not a huge fan of Hainan ji fan. It's got potential - even a quick trip under the broiler works wonders on it - but I'd take a biryani/pulao/locreo over it 7 days a week, twice on Sundays.

It's dry-brined, and then poached in rice wine (shaoxing) with soya sauce, and a bunch of scallion, ginger, and pandan leaves (at least in Singapore) and a bit of sesame oil. It's not sad boiled wypipo-eating-catfood chicken. The rice is done in the "broth" made from cooking the chicken with extra ginger, garlic, and some of the extra chicken skin and fat trimmings. It's not just some Minute Rice tragedy neither.

It's not as boring as it looks, but it is better with a bit of a char or sear on the chicken skin and a bit of shallot in the rice. When I make it, I remove the skin after the chicken's done and pan fry it.

Did you mean white meat chicken? Yeah, absolutely. Should be a whole chicken, or at least some dark meat in there too to fatten up the broth.
I get the point of it. I'm just not Chinese enough to prefer chicken skin leather over something maillarded and crisp... so I'll underpoach a little bit and give it a trip under the broiler or torch, or just pull the skin off and crisp it up. The meat still winds up soft and juicy.
