Hot sauce should never be fruity or sweet. Also, there's no point in owning more than like 5 hot sauces in general. Just get sriracha, tapatio, frank's, green tabasco and maybe 1 novelty sauce if you're a bored retard that needs it.

I disagree with most of this. Strawberry and blueberry both work very well with more earthy and smoked peppers; pepper 'syrups' are pretty good with wings ("Sweet Thai" sauces); and your list is very heavy on the spiced vinegar.

I do agree that if you have more than five sauces going at a time, especially if they're not being used, that you may just be a hoarder. Even five kind of requires variety in heat, flavour, and use.

red peppers are fruits and can be sweet. habaneros are pretty fruity on their own and some of my favorite hot sauces will pair them with pineapple or something like that.

There's something satisfying about getting a whole range. When one company is coming up with the recipes they're specifically trying to make each one unique to the others so you know you're getting a nice distinct spectrum of hourt sources

I made a few pints of strawberry-rosemary-garlic-reaper sauce (kind of treating strawberry like tomato), brought a few little bottles in to work, mostly to give to the craft services crew... I'm making six pints of this stuff a month at this point, and it's hot enough that I'm really surprised any of these guys are coming back for seconds already.

Which is to say that when treated appropriately, I agree that fruitiness can really go well with most hot peppers.
