Let's make something vaguely inspired by chef John's chicken cacciatore because I bought capsicum a week ago and forgot about it and now it's pretty old and I need to use it up
Get those aldi mixed chicken pieces oiled salted and peppered
Not great but should be fine for this
Begin chopping up veggies as chicken goes in to brown
I reckon half the cloves minced and the other half go in whole
>>21962495i reckon you need to grab that tube of tomato paste and take a photo pretending it is your penis
>>21962496
Chicken out, onion and garlic in, add salt to draw out water and scrape off chicken fond and then cook until onion fond develops
Big squeeze
>>21962497based
Add what I have left of this absolutely bottom shelf merlot because I don't have any tomato sauce
This share house I just moved into is full of probably years old spices that nobody uses because they all eat uberats
Top off with water because I used up all the stock I made yesterday
>>21962502buying new dried herbs makes a huge difference. i recommend refreshing your stock
It got back to a simmer so Chicken back in>>21962504I'm just trying to minimise expenses because here you don't get the student benefit from the gubmint until you turn 22 unless you're from a poor family
Then capsicum
Bye bye
Fugg
Ogey that'll do for now
My first inclination would be to serve this with classic Algerian style garlic potatoes like my mum makes but I've been eating potato all week so I reckon rice. Just washed it now but I won't cook it until the chicken is done
What country do you live in that you call bell peppers 'capsicum'?Otherwise good cooking thread.
we call em paprikas
Whazzap Uncle Dan
>>21962514Australia. Apparently only AU/NZ does this, even the UK calls them peppersIf you ever come here try this beer
>>21962524>Coopers redcareful there sonny
>>21962527Enjoying my time
It's out
Stirred through and tastes great, rice is on and it'll be served shortly
Stir through salt and olive oil I dunno if anyone else does this but my mum did it with rice so maybe it's a north African thing, same thing you do with couscous
And serve, that's basically it.First time making this dish, good way to use up capsicum. Tastes good. Have a good evening everyone
>>21962486there's a couple weird lookin cuts in there wtf is that
>>21962557https://www.aldi.com.au/product/broad-oak-farms-rspca-approved-chicken-mixed-pieces-2kg-000000000000476513Weird factory offcuts from aldi, it's the cheapest I think. When I was in Melbourne I'd just get everything from the halal butcher and ethnic fruit and veg market in Coburg but now I live in Canberra aldi is the next best thing. Oh well
clean your stove bro damn
>>21962486Don’t you mean “dry-brined”? Lol
>>21962497ha>>21962538>>21962544>>21962547ty
>>21962547That's too much for one plate
>>21962547loks good m8
