>>21963134Black beans and kidney beans are my fav. As for the rest, lentils and garbanzos/chickpeas can be great especially if it’s a spiced Middle Eastern/Persian/Indian preparation. Haven’t eaten adzuki beans in any other form other than red bean paste, which was great. Fava beans are fire if it’s ful medammes. The rest are varying degrees of meh, though I wouldn’t mind soy if it’s soy milk and Sichuan mapo tofu

I don't eat em as much as cheaper stuff like lentils or pintos, but damn chickpeas are versatile af. I think I recall a Mary's Test Kitchen youtube vid about them. Like, you could make eggs in some way. Maybe she made tofu out of em. Hummus is damn amazing too, or put in your curry, or indian foods/snacksAs a different choice, I've only had a handful of times, but butter beans (mature lima that are white and not green anymore) really do live up to their name, like super creamy.

Chickpea flour +water +oil can be used as a replacement for egg in batters and baking but chickpea flour "omelettes" are even less like egg than chickpea curd scramble is. All that said, I'm from Naples so I'm practically 30% chickpeas by weight though they're not my favourite bean. That's likely fava.Also, I used to date a Nigerian and she cooked these things called African honeybeans that are made with crushed roasted prawn shells and chilies and stuff and they're delicious but I'm unsure how they are plain.

They are great as part of burrito fillings for example or in salads.For bean stew I just mix all three with some pork, peeled tomatoes, onions, carrots, celeriac and leeks. Having three different kinds of beans in the stew keeps it interesting.
