It is time for the greatest debate;
Enameled vs raw.

Enameled is way easier to maintain but not nearly as durable or nonstick. You can also cook acidic foods in it like pasta sauce.

Raw is harder to take care of but indestructible and provides a better nonstick when properly seasoned. It also gives a little bit better of a sear in my opinion and is like half the price.

I own both and I find myself using my enameled way more than my raw simply because of the convenience of being able to basically treat it like any other pan. When I do use my raw, I feel like I get better searing, better carmalization, and better fond.

Enameled cast iron can absolutely last for generations, much like raw cast iron, you just have to be a little more gentle with it or you can Crack the glaze. You shouldn't be throwing it in your camping gear or tossing it into an open bbq pit like you can with raw.

Enameled anything leaches heavy metals into your food. Raw Cast is best for greasy foods. Nickel free stainless (18/0) or Pyroceram for everything else.

Never managed to fry an egg in an enamel without it sticking heaps but I also could just be a retard.

I find my cast iron does everything with ease now with good seasoning and the finnickyness is super overblown. It scrubs out really easily when you're done cooking and all you need to do is an extra minute or two drying on the stove and then doing the little coat of oil at the end. I don't really get what people are on about especially with ease of use because its so easy

Between a stainless steel saucepan, a dutch oven, and a cast iron frying pan you can do anything really

Raw and its not even close. I was gifted enameled cast iron pots and they are fine but more often than not they are vessels to boil water for pasta and braise. I could braise just fine in a regular raw cast iron and would prefer to cook in stainless for chicken and vegetables. Cast Iron is best for Beef and Lamb, burgers and eggs then stainless is the best for sauces, veggies and chicken. If someone trys to gift me non stick I just either tell them to get their money back and if they insist then I just try and return it. Non-stick has a shelf life.
