My whole life I've been slicing onions from root to tip across the grain, but just now I found out you're supposed to do it WITH the grain??

The two different ways of cutting make the onions absorb liquids in the pan differently.
Cutting across the grain will make the onion break down more quickly, and absorb into sauces better, if you just want the flavor.
Cutting with the grain is better for texture, and keeping more fresh onion taste.

it's called diced.
minced is smaller than diced and best prepped in a food processor, then you scoop that soup you just made into a cold bin with one of those plastic separators so the liquid drains away from the onion pieces.
