Japan is an absolutely amazing and beautiful country, but somehow the food is the beat thing about it. The quality is just simply so much better than in the US.
Driving around the mountains and staying at a cute, traditional Japanese hotel… God, i need to go back.

There's this roast bone-in chicken you can get in Kagawa that really stuck with me.

It shouldn't be too hard to make yourself but I haven't gotten around to it.

i see these sold at yatais in videos, this was kinda crazy. they take a chicken thigh and barely cook it, then cut it up with scissors. eating pink poultry is something that just doesn't happen in the west, and over there they like it. I'd expect all the tendons in the thigh to be annoying when it's so undercooked

They're using chicken that has been processed in a different way that's conventional to the cheap chicken we're used to. Mass produced cheap chicken have feathers, not hair, so to remove them they put the chicken in hot water that makes it easier to get them off, but it also opens up the ass so basically mass produced chicken is washed in chicken shit water. If you want to eat it raw, you'd have to clean them in a more expensive, individual way. If there was a cheap way to do it, we'd all be eating undercooked chicken like we do steak
