I dropped in the vegetables and cut up leek but very annoyingly I had to switch to a larger pot.

After an hour and a half of simmering it's mostly done. It has a nice meaty taste with a sweet, herbal undertone and a light taste of ginger. The ginger does nice work in making it not taste too earthy, it's kind of refreshing.I dropped in some parsley.

Test bowlIt's good.I tried adding some beetroot vinegar I had to the bowl, and I won't be adding it to the pot. Does not improve the flavour.
