After an hour and a half of simmering it's mostly done. It has a nice meaty taste with a sweet, herbal undertone and a light taste of ginger. The ginger does nice work in making it not taste too earthy, it's kind of refreshing.

This stew is very vegetable heavy and filling
I must say, I'm very fond of the ginger. It's a good addition to the recipe.
