It's good on a lot of things but it just lands in the pantheon of sauces on my sauce shelf. Good, Asian Hot Twang good for certain foods, but not gonna be put on everything. Had a similar run to the Tapito/Cholua run and the Southern Boomer Assfire Cartoon Sauce run all of which followed the Indie Barbecue Sauce run about 15 or so years ago.
Just expanding American/Western tastebuds as their diets diversify.
Nobody should be putting Tabasco on everything when a burrito tastes better with Tapatio, Fried noodles taste better with Sriracha and St Louis Barbecue tastes better with Frankie's F**king Fortified Fire Fart Fluid Ghost Pepper Sauce

nah, it was mainly the advent of the alcoholic seltzer, and a renewed interest in fitness, plus a shift away from alcohol and toward legal marijuana by 20-30 year olds. IPAs are still being made and innovated upon, but the craft beer scene has become much more niche because tourists got filtered.

that's true and i also think this is a result of brewers that were new in the IPA rush becoming better over time. bombastic high alcohol dry hopped IPAs are like the easiest thing to make. it takes more skill to make something more subtle. maybe breweries are shutting down, but the ones that persist probably have more experienced and gifted brewers who have decided to make more complex styles. that being said, the nee IPAs i do see are more creative than they were 10 years ago.

Nah, their pepper supplier only supplied peppers to Sriracha so Sriracha tried to fuck them over in order to increase shareholder profits (not even by a lot). The pepper suppliers stopped doing businesses with them and then Sriracha panicked and scrambled to find a new (and worse) supplier.
