after simmering the meat and vegetables in beef broth for about 90 minutes the meat seemed pretty tender so I added a bunch of lentils that I had pre-cooked the night before but then I remembered I forgot to add the potatoes I had diced up earlier so I dumped those in as well and thought "oh well, the lentils are going to get totally ruined while I cook the potatoes". then I left the kitchen for about 15 minutes and as I was coming back to check on the stew, I noticed an odd smell. as I got closer I realized it was the smell of burning food. sure enough, as I entered the kitchen I saw black smoke billowing forth from the pot. I quickly turned on the range hood and took the pot outside until it stopped smoking. (I was extremely lucky that the smoke never tripped the fire alarm because they're all connected - I would have woken up my entire building. you also can't turn the alarm off yourself.) Anyway, after I took the pot back inside I poured it into a big container and apart from a couple of bits of charred food that I fished out it looks completely fine to me so I am going to probably eat it. I don't think there's any way the potatoes are done but there's nothing I can do about that now except I guess fish them out and cook them more on their own.anyway, it seems weird to me that it would have started burning considering there was still plenty of liquid inside (and, yes, I added extra broth since I know lentils soak up a ton of liquid. but again they had already been cooked for probably 30 minutes and had only been in this pot for about 15). I guess I underestimated them.

this happens with stuff that had a high solid content like beans. you need a thick bottom pot to conduct heat. if you have a shitty thin Walmart pan you have to keep stirring or it'll burn.

>>21971817Years ago I had a stew get partly burned at the bottom similar to this (though not with visible smoke). My deduction was that the ratio of solids to liquid was too high (esp. rice in this case), and I had stepped away for a bit so it wasn't being stirred. All the components piled up on the bottom and prevented liquid from circulating, so heat built up, dried out the bottom later and led to burning. This is likely what happened to yours. Pouring it out right away was the smart move, as others have said, I stirred mine and mixed the burnt parts in before realizing it was a mistake.The key is, when you've got a stew this dense, you need to stir it regularly, and/or keep the heat at low-medium or lower.
