For me, I have always loved the darkest of chocolate. When I was a child, I saw my mother using baker's to make sweets and I begged her for a block. Thinking it'd be funny of course she gave me a piece, and to her horror I absolutely loved it. 100% pure cocoa for me, baby girl. Now make me some of those apple fritters that I love so much.

I loved the Valrhona Noir Amer back when they made it. Looks like it was less than 85% (their "Extra Noir Amer" is 85%), I thought it was much higher.

Unironically, this stuff is cheaper than the darkest mainstream or niche dark chocolate because it isn't branded as some sort of premium treat by major brands, and is just sold in the baking islem
