Tried to make Greek Tsoureki yesterday for the first time, almost had a break down cause I couldn't figure out how to braid it. I think I over proofed it a bit because it was puffier before I put it in the oven.

Still the taste/texture was great.

This is sweet? The shape makes me think it should taste garlicky
>>
>>21972756
Yes it is sweet. I saw a bunch of recipes, some people put a lot of sugar, I put just a 100gr for 500gr of flour and it's just how I like it.

I'm making another one tonight cause this was the test one since I've never made it before, might put a little bit more sugar because the family is used to it being sweeter traditionally.

I’m not Orthodox, is this bread related to communion?
>>
>>21972768
No, this is the bread with which you break the fast on Easter Sunday after 40 days of Lent.
>>
>>21972753
How do you spaz out over 3-strand braiding? Shits the easiest thing in the world, even when working with bread.

Perhaps I'm retarded (seriously considered it).
It was late at night after a long day and was in a hurry.
>>
>>21972773
Oh that’s not just a Catholic thing? How do you like living in Bulgaria?
>>
>>21972823
lol, I forgot I had the name on, I put it on because I'm actually in Greece rn for Easter.

It's ok all things considered. I like it :)

I like slav food a lot. I made vareniki a few days ago
>>
>>21972911
Depends which type of slav, in Central and Eastern it's more Russian and German influenced, in the SouthEast it's more Middle Eastern and Meditteranean because of the Ottomans and the sea although our main meat is pork which the Turks don't eat.

But yeah it's pretty good.
>>
>>21972753
Oh that looks amazing.
>>
>>21972950
thanks, I'm making a second one, I'm gonna try to not overproof it this time, put in a bit less yeast.
>>
>>21972922
Central and Eastern are what I’m most familiar with. Someday I do want to visit the balkans
>>
>>21972969
are those flecks of orange zest? sounds good, i am absolutely sick of regular kozunak, it's so bland and dull
>>
>>21973032
Yes, orange zest and a bit off orange juice, it also has Mahlepi (cherry pit powder) and mastic resin.
That's how Greeks make it.

It's good, you put in one gram because it's strong. It's not Mastika don't worry.
>>21973096
It wasn't meant to be, I should have bloomed the yeast but I was in a hurry.

Change of plans, making Koulourakia, not throwing this, I bought premium ingredients.
>>
I've had Koulich and Pannetone and I don't like either. They're not tasty enough to just eat on their own, and they don't go well with butter or anything else you'd put on bread. I also hate pieces of fruit in my bread
But! Tomorrow I'm going to a greek place so I'll try some (restaurant-made) Tsoureki. I'll see if it's any better
>>
>>21973235
>>21973093
We are so fucking back actually.

>>21973320
Yeah I feel the same way about fruit in panetone that's why I buy the chocolate one.
>Tomorrow I'm going to a greek place so I'll try some (restaurant-made) Tsoureki. I'll see if it's any better
Mm very nice, well if it's freshly made it will be good but if it's baked from the night before the texture changes a bit.
>>
>>21973320
What do you mean? Kulich goes very well with butter.
>>
>>21973320
There isn't a bread in the world that doesn't go well with butter. The fuck are you talking about?

You order food, you should be shamed and slapped on the spot.
