The trick is to not skim via a spoon when cooking, and then use bread to skim it off the surface when eating. Bread would soak the fat up and can be eaten. This was the traditional way of eating bread and soup before haute cuisine restaurants had to reduce bread to crouton bs so that snooty rich patrons can eat using fine cutlery only. Also the Jews skimming off chicken fat from chicken soups for schmalz and popularizing it as “healthy” didn’t help.
