What do the intellectual giants of /ck/ think of uuuhhhhhhhhhhhhh pork chops? I just noticed they're cheap as fuck at my local grocery story compared to beef and chicken. Never cooked a pork chop in my life.

Cheaper than chicken for me too. I like them in a cast iron, seared, then finished in oven surrounded by veggies. Also, cut into cubes, fried in pan, add veggies and rice and your sauce of choice. I make a sauce (idk what it is called) with soy sauce, oyster sauce, mirin, ginger, and some garlic that goes really well with it.

idk wtf a "pork chop" even is. That's American cuisine for you I guess. There are at least four different kinds of pork cuts commonly available (sirloin, ham, and _two entirely different_ "shoulder" cuts). They make completely different meals and call for completely different preparation.
One popular "shoulder" cut (of red meat) should be basically indistinguishable form beef steaks if that's what you're looking for.

people don't know how to cook them so they aren't that popular. they don't brine them, and think they need to be cooked well done (which was somewhat true once, but not anymore) so they turn out dry and tough. they also don't have the prestige of a steak, or the universal appeal of a chicken breast. so people pass them up.
I'm okay with it though, keeps them cheap. I like to buy those big pork loins and cut them into chops. it's hard to find a cut of meat that's better bang for your buck.

you used to have to cook pork well done because it was a major carrier of parasites. those harmful parasites have basically been eradicated (at least in 1st world countries) but a lot of people's cooking techniques haven't caught up to that yet and they keep passing down that you need to fully cook them.
I wouldn't cook a pork chop as rare as I like steak (although you can), but around medium to medium well is ideal.

Tonkatsu is almost the same thing except with panko breadcrumbs.
Slice it into strips after frying, serve with shredded cabbage and rice.
A Japanese person I know prefers Bulldog brand sauce to serve it with, but A1 is pretty close. I guess it's pretty simple to make a similar sauce, but I've never bothered.

Always take the bone-in cuts. Chops are pretty basic flavored by themselves. They can definitely use the help of a grill or dish. The bone makes them significantly better and gives a little extra I like to use for stock or sauce.

pork's actually kind of expensive right now in the US. pig stocks are very low and there's lots of demand for the shoulders because of barbecue shit, and the only thing that's cheap is loin, which is flavorless protein that cooks like chicken breast.
