Expensive knives are a meme

>buy Global
>now I'm worried about it chipping or rusting all the time so I barely ever use it
>buy a Shun
>worried about it chipping so I never use it and return it
>>
you fell for a meme
all you need is a mid price victorinox set and a whetstone

If you're a chef who cooks dozens of meals per day then you need a high quality knife that retains its edge, as well sharpening skills and equipment to service it regularly.
If you're just cooking a couple meals a day at home then you don't need more than a walmart knife and pull through sharpener.

Rusting and chipping are things you need to worry about with cheap knives also. Just wipe the blade off when you're done using it, and don't use your knife to cut frozen foods, bones, or use it to pry things.

saw someone say an avocado chipped their shun

I think most of my problems with my knives are resolved by honing it. You don't always have to take off material.

slamming the knife into the pit isn't really good for the knife. it's not too different from trying to chop through a bone or something frozen.

you can cut into a pit with a light chop from a the back of a butter knife, i think it's fine
