I fried french fries in beef tallow to see if it really does taste better. It doesn't. Seed oil makes the fries taste better.

Did I mess up? I made them the same way?

I found them quite equal in taste. Not noticeably better though. Depending on what you believe about saturaded fats and omega6 though, you might consider them healthier.

i do roast potatoes in clarified butter and they come out tasting a little creamy, very subtle you wouldn't notice it unless i told you what they were roasted in

i don't like the way most animal fats taste, they all have some kind of funky gamy flavor that i don't like. soybean oil tastes bad too though, other seed oils are more tolerable.

Soy/corn oil burn at a lower temp than tallow so food sits in it longer soaking up oil while it cooks. Peanut oil heats even hotter but is also expensive to try to deep fry with.

No. There are some of us around that worked at "a high volume fast food restaurant" when they switched from animal fat to vegetable fat. The difference then was slight, but noticable. Since then, they've changed their formula a few times, and now the fries are just as good as back then. It's just that no one wants to admit it.

Afaik, no, you did not. I tried beef tallow fries too and realized that it was just a marketing gimmick. Just stick to normal oil or peanut oil or wtv you use. It's less expensive and still tastes good.

If you have some animal fat leftovers from making carnitas or barbacoa, then yeah, maybe it'll make the fries taste better, or rather they'll impart some of the seasoning you used to flavour the other meal you made, but that isn't necessarily from the tallow or lard or duck fat.

i've also been told by a friend that duck fat fries also sucked too, in that it wasn't special. There's a good chance that it's simply fries or potatoes that don't improve in flavour with animal fats. Like, if you did a confit in those fats for carnitas, then yeah it definitely could be an improvement for the cut of meat. But potatos/fries aren't a good choice. Dunno though
