French lentils are the best. They hold their shape better without disintegrating. Red lentils literally disintegrate into a formless paste. French lentils are nice mixed into rice at ratio of 1 lentil for every 3 rice, they're nice simmered in broth and finished off with balsamic vinegar, and they're nice stewed with heavily caramelized onions and vinegar.
