Maybe, but I only suggested sage sausage because I know it's a thing and, from having made it, I know it uses a lot of rubbed sage.

I guess? I've never actually had sage with anything but pork and poultry. It's part of my turkey seasoning for Thanksgiving, occasionally in my roast chicken seasoning (though I usually go rosemary) and I use whole leaves in chicken cacciatora and boar ragù.
Rosemary is my lamb go-to
