In general the average person today has wayyyyyy too much carbs in their diet. I'm not a "zero carber" but I do believe you should significantly limit your carb intake, and cut out all processed carbs like bread, sugar etc. unless you have an extremely demanding physical job, but most people do not.

The average person is getting too much of both fat and carbs because a large amount of fat and carbs being consumed are both refined which makes them less filling. Try eating nothing but fresh fruit and whole nuts and you'll struggle to maintain normal weight. The average person is probably eating cookies more often than that.

i would like to try raw milk eventually but i have zero issues with pasteurized milk and don't think the increased risk of food poisoning is worth it. there are companies working on methods to make raw milk just as safe but until that's more accessible i probably won't care too much to seek it out.

Serious answer is, its live food.
Imagine if u are to cook all of your food. So no raw fruits, no raw salads, no sashimi, etc.
Will anything bad happen to you? Will you die? The opposite in fact. Its much safer if all of your foods were cooked.
Now imagine eating like this for years and years. Then one day, you taste a piece of raw fruit. Do you think it will taste fucking amazing? I think it would.
Why? Because its alive. Im not a scientist so im not gonna try to explain it scientifically, but essentially thats the reason.
Pasteurlzed milk is safer, of that there is no doubt. But its missing something. And until youve experienced that something, you wont get it.
You can still get live dairy food in the form of cheese. Many cheese, like parmigiano and roquefort, are raw by law.

Aged cheeses are too dry and salty for microbes to live very long. Even in the USA, raw cheeses are legal if aged over 60 days because it mostly kills even harmful bacteria. You'd be better off with something like unpasteurized yogurt or kefir if you want it to be probiotic.

anyway I agree with the broad strokes of what you're saying but applying it to whole milk of all things is retardedly overzealous, it follows the typical pattern of nutrition influencer memetics in which they learn of a concept and then construct these insane hard and fast rules around it (oh PUFA is bad? ZERO PUFA EVER! oh the randle cycle exists? NEVER MIX FAT AND CARBS!) which are stupid and counterproductive, a little nuance never hurt. if you are already metabolically healthy you barely need to worry about the randle cycle at all and in fact *should* eat all 3 macros together in individual meals (though ideally your overall macro mix should tend towards being carb- or fat-dominant)
