Let mixture sit for 5 mins, then add avocado. Use either gloved hands or potato masher and mash until a chunky mass. Taste for preference adjusting for either lime juice or salt. Sometimes I overshoot the line in which case I correct by either diluting with more avocado or olive oil. That's it, serve with tortilla chips, pork rinds or whatever you please I personally do not prefer tomato on my guac but if you must, use only the flesh, not the watery seed slime

I've done regular garlic and have had people tell me its too overpowering but switched to roasted garlic and said it tasted more balanced. Considering Mexicans do a lot of grilling I'm not sure why roasted garlic is so fucking outside the norm for guacamole when it pollutes your normal salsas. Also pic rel is how I feel about roasted garlic.
