My tax returns are going to arrive in a couple of weeks and I have a 7 cu. ft. chest freezer. I want to spend 1 day each month cooking 1 months worth of meals because I have zero time and energy to cook 1x a week, forget everyday. Half I want vacuum sealed, and the other half I want to home can it. What vacuum sealer on the market isn't shit? The tax returns are most likely going to give me ~$1500.

I bought my parents a Bonsen Kitchen VS4100 off Amazon about 1 & 1/2 years ago. It was $100 on sale. I've used it a few times teaching them how to use it, seems quick (I have no prior frame of reference) and haven't had any problems. I have not tried to vacuum seal cans with the attached hose. Bags would be up to your preference whether you want to buy the rolls or individual bags.

I have a chest freezer and a vacuum sealer, and never use the vacuum sealer. I should probably start using the vac sealer
But for all the food I cook myself, I go through it fast enough that using ziplock bags preserves food fine, no need for a vacuum seal.
Are you planning to vacuum seal things like meat you butcher yourself? Or your actual prepped frozen meals? Cuz vac sealing individual meals is most likely overkill. Not sure if you've done this before or have a method you're trying to replicate

Correct, I haven't vacuum sealed.anything before. I read it's the best storage method for freezed food so I think why not give a go?

You don't need to go for such crazy meal prep even if you don't have time or energy to cook. You need to buy a slow cooker that will cook meals as you work and when you come home, you just need to get a plate and eat it.
It's really simple, just put rice, lentils, sausage, steak, veggies whatever in the slow cooker with spices and leave it when you go to work. It's the simplest thing you can do. You just need to put stuff in it, that's easy.
Vaccum sealers are not cheap, last i checked. Plus they can do solids fine but not liquids usually. Lastly, it's just not a very positive thing to eat mass cooked month old reheated meals.

why not just use plastic containers?
if you freeze leftovers they last 3-6 months in the freezer unless you cook a lot of fish or something. you dont need to go as autistic as vacuum sealing shit.

Yup vac sealing is overkill most of the time, but especially for meal prepping. Save the time and energy!
Freezing entire meals is kinda bleh, but whole burritos freeze well and can be a complete meal

why not? theyre home cooked and one month in the freezer is nothing. the fresh apples you buy at the store have been in refrigeration longer than one month.

It's for lab use. Much more convenient than hooking up a dessicator to house vacuum for sample storage.

white flour / white rice with oxygen and moisture absorbers will last indefinitely. like 40+ years. sugar will last 100 years just sitting in a jar with no preservation.

whole grains only last 2-5 years even when sealed because the fats rancidify.
