Because for the most part you're buying it to make up for deficiencies not to enjoy as food. Like if you're highly active you probably have some minimum, say 60g per day. And if you have a social life, sometimes it's hard to hit that number without supplements. You can sort of do a lazier process and let more byproducts into the end result and it will taste better. There's a brand of protein shake I used to get, that had a lot of the fat and other milk components in it, including lactose. Needless to say it was a niche product because most people don't want to spike their fat consumption or cholesterol or get lactose farts or whatever. But it tasted really good.
