The most important thing with root vegetables is keeping them in cool and dark conditions. The ground is wet, potatoes don't rot in the ground for months. Paper can br a problem because if the paper gets wet mold can grow on it, and the potato is wet. This is why you will get one bad piece of fruit or vegetable and suddenly the whole lot goes bad
