Why didn't Africa cuisine have international success comparable to others?
no sizeable diaspora to spread the food. Chinese food was brought to the west by Chinese immigrants, Italian food by Italians. There are not millions of dark Africans pouring through Ellis Island and occupying an entire social class of cities like the former.Also Afro-Caribbean foods have had a huge influence on American food, southern, cajun, creole, etc.
Africa is a continent. I've had Nigerian and Ethiopian food just off the top of my head. Fucking Marcus Samuelsson rules. It'll never be Chinese or Italian, but that's fine by me.

Everything cooked in sub sahara is foul.The food in Egypt and Morocco is OK but it only gets worse the further south you go, and it's a long long way to mukambura, where it suddenly improves.

Ethiopian food had a brief moment of being “hip.” But a lot of the subcontinent is on basic sustenance level, you’re not going to see ugali become a popular food fad any day soonWest african, especially ghana/nigeria and that general region has some potential, both because of their large diaspora in the yookay and because their food is at least slightly more interesting. But a lot of it is very basic, rice with some stewed fish or meat, and some kind of pulse. It’s not bad food, I went to an african wedding and liked the flavors, but not exactly ripe for universal popularity. Maybe there can be a slop bowl chain with jollof rice and stewed fish that the urbanoids can all fawn over for $25 a bowl.

Several of their signature dishes rely on a super specific ingredient that is completely unavailable anywhere else. Ex. good luck locally sourcing egusi seeds (no, pumpkin seeds are not a good substitute) or bitterleaf outside Africa (and importing is quite uneconomical).
