Cooking thread. Vegan Mushroom stroganoff with added tempeh for protein. Chopped two large leeks and 20 oz of mushrooms (lion's mane, oyster, crimini) yesterday and had them in the big bowl in the fridge.

Nah, you don't notice it in with all the other flavors. Tempeh absorbs the flavor of whatever you cook it with so when you put it in with the mushrooms and leeks it just tastes of that instead of bitter beans.

You need to stop fearing the bitter flavor. It's no longer an indicator of toxins, we ain't eating random weeds anymore. Bitter can enhance a dish same as any other flavor (admittedly the ceiling is considerably lower than something like sweet/salty).

And that part of Acts is being taken out of context, he was being shown the vision to get him to go preach to the gentiles. Paul later gets into eating in Romans 14:3 where he basically says to eatq whatever you want, but my diet is taken out of Daniel where he eats only vegetables and eschews all the king's fine foods. Biblically speaking, there's not a lot of support for a vegan diet outside of that bit, but it still happens to be true that humans are not supposed to eat the flesh of animals. Like I said, I'm not happy about it - I grew up eating meat and at this point I would damn near kill for a roast beef sandwich, but rules are rules.

I’ve been vegan for a years now, mainly for ethical reasons, feel good on it. My wife still eats meat and in all honesty I don’t mind that she does. Her young son also eats meat but I try and give him non-meat options at meal times just for variety.

It's not fear. The bitter off taste is unpleasant. Tempeh is meant to parboiled to remove some of that unpleasantness. It's a common practice in tempeh eating cultures. I think you're just trying to justify your laziness and lack of tempeh cooking technique.
