Cooking thread. Vegan Mushroom stroganoff with added tempeh for protein. Chopped two large leeks and 20 oz of mushrooms (lion's mane, oyster, crimini) yesterday and had them in the big bowl in the fridge.

Need to do the mushrooms, leeks, and tempeh in two batches due to the size of my pan. First batch.

Coming along. Added garlic, thyme, and salt after it had cooked down a little.

Same as before, garlic, thyme, and salt. Vinegar to deglaze the pan.
Veggie broth mixture, plus coconut milk. Nutritional yeast, paprika, tahini.
Let simmer for a while, then add chopped parsely. The recipe says dill is better but I despise dill.
Finish with a squirt of mustard.
All together with noodles, spinach, chopped steamed broccoli, and a few grinds of black pepper.

>>21994523Nah, you don't notice it in with all the other flavors. Tempeh absorbs the flavor of whatever you cook it with so when you put it in with the mushrooms and leeks it just tastes of that instead of bitter beans.

Biblically speaking, there's not a lot of support for a vegan diet outside of that bit, but it still happens to be true that humans are not supposed to eat the flesh of animals.
