Yeah duck is great. A meat that is definitely slept on by a lot of people.
I tried duck bacon and I would say it is 99% as good as pork bacon. I would happily buy it more often if it were more widespread and cheaper.

Yup. I hate cooking whole duck myself because I never render the fat enough. Breast? Sure. Simple. Crisscross slashes into the skin, cook in a pan on low flame skin-side down until the fat is rendered and skin is crisp then up the heat, season the meat-side, flip and cook to desired doneness (after collecting the grease, of course).
But in the oven? Nah, bruh. Can't cook a duck to save my life.

The problem with cooking a whole duck in the oven is that the breast will overcook before the fat renders and the thighs and legs get tender. It's much better to break the duck down, sear the breasts in cast iron to medium rare and use the legs and thighs for confit in the oven.
