Because none of them follow anything that's the same. Your taco from Oaxaca or Yucatan won't be the same as your taco from Baja or Chihuahua. Different Mexicans in every state. Even Mexicans fight with Mexicans from the capital about if quesadillas should cone with cheese or no cheese or with Oaxaca people over the name of the cheese.
