You're not going to get 100% pure sodium chloride by evaporating salt water or chipping it out of the ground, there's always going to be various amounts of things like calcium and iron. Even factory-synthesized table salt usually isn't pure because most of it is fortified with iodine.

What is different is the texture and size which do affect the taste. Larger salt crystals will obviously give more salt taste than smaller salt crystals.
