Got the opertunity to go to Spain for a week for work, food was pretty fantastic. Notable mentions were the grilled octopus, Iberian pork, fried cuttlefish, and jamón. Also had some sheep brain with a garlic butter sauce, 100% worth the possible prion disease.

Spanish cuisine is mediocre but gets carried by simple dishes that turn out delicious because fresh mediteranean produce is god tier
Like yeah what's basically a tomato soup like Gazpacho or Salmorejo is ridiculous to go crazy about but it really is that delicious and hits like nothing else during summer
Same with how stupidly delicious is to eat a whole baguette dipping it in the oil you fried some garlic and shimps, it's stupid and it's simple but might be the most delicious thing a human has ever tasted.
I'm going to say though, more complex dishes like Paella do nothing for me, they're alright but that's it.

An ACTUAL Valencian paella is fantastic. I occasionally get invited to dinners whenever I'm in the area since I've got friends there. Nothing beats a proper homemade paella valenciana (not a paella de marisco, I'm not a fan). Unfortunately it is extremely difficult to find a restaurant that makes decent paella, even in Valencia, but at least you can make it yourself. Gazpacho and salmorejo are some of my favorite soups and I make them regularly. Tomate frito is a great tomato sauce and works well for all sorts of dishes.

Theres also the fact that spain is quite a culturally heterogeneous country, so its difficult to pigeonhole the gastronomy into truly nation-wide dishes. Eating out in the south eastern coast of spain is quite different from the north, so I dont know.

There's some truth to this. But on the other hand, some of the best restaurants right now are in Spain. Yes, traditional eating is very simple and doesnt use much spice or whatever. But isnt simplicity usually the case for traditional food? And in case we're speaking about sophisticated stuff, we have that covered too with world class chefs.

I'd say if you want to experience spanish food, rather than fixating on specific dishes, you would do better on focusing on the customs of how and when. I honestly think bar culture in Spain is quite unique and when im abroad i dont think i can find an equivalent in europe. If you look for homemade stuff, you should look for how used we are to eating all sorts of beans in different kinds of stews. If these arent to your taste or you consider them lowly, then fair enough.

I ate so much of all the kinds of chorizo on my first 2 days in Spain that I could barely eat anything for the rest of the week. There was simply no space in my stomach. All kinds of seafood was great. Wasn't a huge fan of gaspacho.
