Nothing beats a proper homemade paella valenciana (not a paella de marisco, I'm not a fan). Unfortunately it is extremely difficult to find a restaurant that makes decent paella, even in Valencia, but at least you can make it yourself. Gazpacho and salmorejo are some of my favorite soups and I make them regularly. Tomate frito is a great tomato sauce and works well for all sorts of dishes.

I dont think our food is particularly distinct compared to other southern europe countries, nor I think there should be a burden for spanish food to make itself different from the rest instead of the other way around.Theres also the fact that spain is quite a culturally heterogeneous country, so its difficult to pigeonhole the gastronomy into truly nation-wide dishes. I honestly think bar culture in Spain is quite unique and when im abroad i dont think i can find an equivalent in europe. If you look for homemade stuff, you should look for how used we are to eating all sorts of beans in different kinds of stews. If these arent to your taste or you consider them lowly, then fair enough.
