Here's a menu of a place that has "Grilled Cheese" in the name yet sells "melts" and calls its cheese-only variety a "melt". As you can see, melts can be considered grilled cheese and even grilled cheese can be considered a melt.

If you put cheese on a hamburger it becomes a cheese burger, if you put a patty on a grilled cheese it becomes a patty melt.
