I like to make a fluffy omelet by adding a small amount of baking powder to two eggs before beating the shit out of them. Just plain beaten eggs. Don't need salt or anything else. Covering the pan will ensure it's all cooked evenly. And if beaten thoroughly, the baking powder will emulsify with the lecithin in the yolk and prevent popping among other things.

I honestly really hate eating the eggs yellow but i don't dislike the egg white. I used to gag at the smell of egg in the beginning but i built up my willpower and forced myself to eat them. I still only tolerate them but i still eat them

How do I get my french omelettes to stop sticking to the pan?

I use lots of butter, I keep the heat low
>>
>>22000228
The bottom has to be fully cooked.
>>
>>22000228
Higher heat actually makes it stick less, you just have to be faster when cooking and getting it out of the pan if you don't want it to brown. If it's a steel pan you can do a temporary seasoning by getting it quite hot then adding some fat and letting it cool down to cooking temps. If it's a nonstick pan then you probably just need a new one.
>>
>>22000145
over well is a nice change, the left one was still runny
the texture on over well especially on stainless is sublime, most of the time i go for a sunny side up but like i said, variety is nice

>>
>>22004002
It was boboli pre-made crust and I had to mix the eggs with "quesadilla cheese (Monterey jack?)" to keep the egg on the crust and I still failed which is why the crust is torn on the edge, egg spilled off in the oven and I had to rip it off the foil.

I think a more traditional crust with a thicker outer crust ring would assist with that. I’m not sure if a tomato base would help with anything but i think it would be a great addition
I’m really into this pizza idea, you’re baste for trying it
>>
>>22004030
I don't care for the red sauce so there was an olive oil base on the pre-made crust (probably why some egg slipped off, damn it). Does Casey's have red sauce on their breakfast pizzas, that's who I was trying to emulate since there are no Casey's near me.

My neighbor has chickens. She has already invited me to grab some fresh eggs from them sometime, but I haven't taken her up on it. I'm too socially stunted to ask if I can grab some eggs. I don't want to wander into her backyard where the coop is and where I may accidentally glance through a window into her house and invade her privacy. I just keep buying store bought eggs at $5.50 a dozen.

Someone convince me to ask her if I can take some real eggs.

You'll know when an egg is bad.
And it's normal for them to last a really long time, especially in the fridge. It's a shell that's made to protect against the outside. If anything at all gets into it the egg has no immune system and basically you'll know. Imagine meat rotting in a sealed box.
