I like to make a fluffy omelet by adding a small amount of baking powder to two eggs before beating the shit out of them. Just plain beaten eggs. Don't need salt or anything else. Covering the pan will ensure it's all cooked evenly. And if beaten thoroughly, the baking powder will emulsify with the lecithin in the yolk and prevent popping among other things.

I'm hindu boy and i have been protein deficient all my life so i now eat 8 boiled eggs a day (4 lunch, 4 dinner) and my hairline has improved so much it's crazy
I honestly really hate eating the eggs yellow but i don't dislike the egg white. I used to gag at the smell of egg in the beginning but i built up my willpower and forced myself to eat them. I still only tolerate them but i still eat them
>>
>>22000067
Good for you, why only boiled though, do scramble or sunny side up sometime.

How do I get my french omelettes to stop sticking to the pan?

I use lots of butter, I keep the heat low
>>
>>22000228
The bottom has to be fully cooked.
>>
>>22000228
Higher heat actually makes it stick less, you just have to be faster when cooking and getting it out of the pan if you don't want it to brown. If it's a steel pan you can do a temporary seasoning by getting it quite hot then adding some fat and letting it cool down to cooking temps. If it's a nonstick pan then you probably just need a new one.
>>
>>22000145
over well is a nice change, the left one was still runny
the texture on over well especially on stainless is sublime, most of the time i go for a sunny side up but like i said, variety is nice
>>
>>22000228
Higher heat, what kind of pan are you using?

bros i just had some fresh market eggs and they were amazing, the only issue is that the shell was so thin they're too easy to break/scramble. what's the best way to crack open delicate eggs?

Someone local sells to me turkey and Guinea eggs. I like them a lot.
I only buy local now (expect Happy Egg during winter if no local eggs)
Duck eggs not very good. Quail eggs are meh.

I have eggs that are washed, in the fridge. That is have been eating. They're over 40 days old minimum but still good. Is it normal?

If your eggs are sticking that means the bottoms aren't cooked. Cover the pan and set the heat on medium-low. Don't flip until you see bubbles on the surface.

My dad makes scrambled eggs on high heat and bakes them intentionally so they darken. I've tried showing him the low heat scrambled eggs method but he says it tastes like snot.

No not to that extreme, basically just the second method from this video https://www.youtube.com/watch?v=oH2EGCwakkI. I did get the idea from a Gordon Ramsay video like that clip you just posted but I ditched that off the fire - on the fire stuff after the first time because it was overkill for a 7 am egg.

What I never understood is why eggs have that weird smell. I hate rotten egg smell, I can barely even stomach fresh eggs if they're cold. It's why egg salad is always a no-go for me.
