I have never seen Limburger cheese IRL.

I tried it once and hated it, ended up throwing half of it away. I think Limburger may have been the first cheese I've ever had that I didn't like although I'd still say the experience was worthwhile if only because I now fully understand the stinky cheese cartoon trope.

With some liver sausage, pumpernickel, raw red onions, and strong mustard it's like the whole sandwich cancels each others pungent ingredients out and actually tastes fairly mild.

There's only one creamery in the US that makes Limburger (the one that's in OP's picture), in WI.
It's delicious, melts really well. The funk gets stronger as it ages and softens. It comes almost entirely from the rind because it's washed with a culture (same one they use on muenster, just a lot more of it) so you can trim it and limit the smell if you're a wimp.
