It comes almost entirely from the rind because it's washed with a culture (same one they use on muenster, just a lot more of it) so you can trim it and limit the smell if you're a wimp.
Yeah I like it, though I prefer Romadur which is even more intense. Smells like nappies, but the taste is fantastic.>>22001167This is the way to do it
