What's a good recipe for donuts? I can make pastry but I always fail donuts, the dough is never right. What's the best way to do it, from ingredients, to raising the dough, to cooking temp and time?

Whatever you do, divide the quantity by 4 or you'll have a shitload of donuts to try to eat before they go stale.
If you're going to do a cinnamon coating, stagger the frying because they need to go right into the mixture because they dry up fast.

That's so true, the few times I tried I ended up with 20 bad donuts

I'm not there yet, right now I just want to make plain donuts that are fluffy and taste right at first. Last time they tasted like yeast while being overcooked outside and under cooked inside, it was awful.
I could google a recipe but it's 99% AI shit out there, hence why I ask here

I'm back, I did some testing today following
Smokin' & Grillin with AB's recipe on youtube. I'm eating one and it's genuinely delicious.
It took me 3 tries because twice in a row the dough didn't rise, I blame the yeast. He says to heat the milk to 46°C which I think is too much, 37-40°C worked the best but maybe that's because of the yeast I had. Then he says to fry them for 45s per side at 190°C, which seems way too long for that temp, mine turned DARK after 10 sec.
Anyway it's really easy once you figure out the right proportions and that fucking yeast activation temperature. I'll definitely write that down and do more in the future.
Now I'm asking: whats the best way to keep them from going stale?

Glad they turned out well, are you going to try coating next? In terms of stale maybe keep them in the fridge and briefly pop them in an air fryer when you want to have some

When frying you want a high temp so food isn't absorbing oil as long. Are some of those supposed to be 'dark'? Old fashion plain is a different recipe entirely with sour cream.
Jelly doughnuts are stupidly simple also, just poke a hole with the handle of a spoon, wiggle it around and then pipe in jam. You can cut a corner off a plastic bag if you don't have icing ones already.
