same reason peanut butter has an expiration date but the open jar in my cupboard is 3 years old
its best by date not expiration date. as in the flavor is guaranteed to be fresh until later. those southern pickled sausages say never refrigerate but you should still put in the fridge and eat within months before the taste gets off.

You know how you have to shake ketchup before using it? That's because the vinegar comes to the top protecting it from air. It's self preserving if it's not too acidic and salty to prevent spoiling in the first place.That said I bought a restaurant can size of mustard but not ketchup.
