ordered a "mystery bag" from the sushi bar where they package all the stuff they're going to throw out that day and sell it at a discount, they gave me Korean beef bulgogi rice bowl, salted edamame and veggie sushi roll.

I'm too choosy about what I get at sushi places for this to appeal to me too much unless it really is a massive discount, then I'd look at it like trying new things I guess.
What percentage off do you get stuff when you do this as opposed to menu price?

I paid £6.75 for 1 bag and the expected value of the bag contents is supposed to be £15.

The total actually came up to only £14.15, its actually done by an app that is a third party who does these bags for loads of restaurants, so I won't blame the worker as they probably couldn't go way over the value when everything sold there is overpriced. That said the sushi roll actually was already price reduced from £5.45 to £3.50 so I really got £10.65 worth of food.

In this instance, I can't complain because I got basically a side, and two mains. I would have liked to get a salmon/prawn roll perhaps but my previous experience using this app was with a nearby bakery who simply cancelled my order the morning of the day I was expected to get it, I had a good meal.

my selection for this is pretty poor, just vegan cookies and a chinese buffet are available typically. someone bots the sandwich spot i think and gets it every day. one time i got indian food and i think they were just using it as a discount, cause they made me a fresh shcwarma and put a sprite can in the bag

If it was discounted to that extent and I trusted that the place was of decent repute, then yeah I'd probably do that occasionally too even if I'm usually picky about my sushi orders. I'd treat it like a fun roll of the dice, though I'd still get at least some of my regular order too.
Has anything even tasted off to you when you've done it? I'd probably avoid certain restaurants in town if that app was here and they were listed.

It's really down to you to pick a restaurant you can trust.

So my advice, or rule if you will, is to pick somewhere you can attest to their quality and you know they'll actually care about your order, I got super lucky in this instance I will admit, the worker at the sushi bar hadn't picked my order and I just chatted with her as she picked things out for me, I thanked her and went home, yes i wanted salmon rolls or tempura shrimp spicy dragon rolls etc, but it was a lot of fun actually.
