I really like Indian food, and I've been getting into beans since beans and grains are a cheap way to eat a complete protein. There's a lot of good recipes for curries with beans and legumes that are popular in India, like red kidney beans, garbanzo beans, and lentils. Do you think I can substitute in other types of beans? For instance, if I am making a rajma (red kidney bean) curry recipe, could I use Great Northern beans instead? I am new to cooking with beans. Also, just in general post really tasty beans recipes, preferably ones that can be the main dish of a meal.
>>22002743yeah you can use whatever bro, just watch cooking times because they differ between beanscheck out this recipe it's greathttps://www.delish.com/cooking/a45457114/tuscan-white-bean-skillet-recipe/
>>22002760Thanks for the recipe link, looks good! What do you think about using canned versus dry beans? It seems like canned ones are easier and pretty much the same result, but are there any advantages to the dried ones? Would the cooking times still be different if I was using canned beans, or no since they're already cooked?
>>22002839advantage is dry beans are cheaper, you do have to cook them longer. I go canned cause Im a lazy fuck, make sure you rinse them off, the bean juice in the cans is nasty as fuck and a salt bomb
>>22002839Dry beans taste a little better IMO but canned is still fine. Only thing is you might want to avoid canned beans that have calcium chloride added or some other firming agent because it always gives the beans a slightly undercooked texture which I dislike.
