Picked up some maitake mushrooms at the farmers market today. Gonna make me a pizza pie.

Dough ball formed, it can help to keep a bit of flour on the side to dial in consistency. I'll let it rise for an hour.

The dough ball is about double in size. Preheat oven to 450F. Punch down the dough and begin to gently stretch it out.

Sauce. I'm using some leftover stuff I made and froze. Blended San Marzano tomatoes with whatever spices you feel like, cooked down for about 45 min. Also optional is blended SM tomatoes, no spices, not cooked.

Last week I roasted some maitake I got from Whole Foods in the oven. Usually I wash them but this time I was a little drunk and said fuck it and didn't. Ate them with dinner and an hour later I had a terrible stomach ache and could feel things moving through my intestines. I writhed in my bed for around two hours feeling worse and worse until I finally felt like I had to puke and blast my ass out at the same time. My mouth began filling with saliva and I knew what was coming and tried to keep it down. Ran to the bathroom and right as I crossed the threshold I vomited all over the floor. My sphinx was convulsing as I tried to keep the shit in, I stepped in the vomit, sat on the toilet and liquid started flowing from my ass. When that was almost done I became very nauseous and had to vomit again so I flushed, stood up with liquid shit dripping down my legs, turned around and projectile vomited in the toilet until there was nothing left in my stomach. The whole time the bathroom floor had vomit on it and it stank horribly and I could smell the damn mushrooms. I hopped in the shower to clean off the shit and vomit and then I had to clean the bathroom floor and walls and door and everywhere vomit splashed. It was so bad I was dry heaving but luckily there was nothing left in my stomach. Needless to say I'm never eating maitake mushrooms again and I'm wary of even button and portobellos which I love and used to eat (cooked of course) a few times a week. I blame the Japanese.

Think you need some oil in the dough and a light coating when rising helps keep it from drying out.
Mushrooms work well directly in the sauce. You can then just chop and freeze them because it doesn't matter.

There is about 1tbsp of olive oil in the dough already. Would you add more?
