Once you have them it will inspire you to break down lots of fish and poultry. Definitely did for me. Double bevel honesukis work great as petty, but I think single bevels work better if you're actually deboning poultry.

Do you have a way to flatten your whetstones? Single bevel sharpening requires extremely flat stones or you'll ruin your knives.
