Medieval "peasants" have been eating gluten-free nutritional powerhouse food. They ate long-fermented sourdough bread. Didn't have refrigerators to slow down fermentation and didn't do the wasteful scoop-trash-half. They kept their sourdough mothers and fermented loafs until the gluten was gone. Gluten feeds parasites. In 1-2 day ferments, the bacteria eats away the gluten and anti nutrients. Long-fermented sourdough supports symbiotic gut microbes. Return to tradition.

they also drank a lot of beer that used malted grains which are easier to digest along with fermentation increasing digestibility further. low alcohol beers are actually pretty nutritious and were more like a healthy version of soda.

some people say potatoes are just a better choice than grains though because they don't require so much processing and people who ate roots and tubers instead of grains have shown signs of generally being healthier since the nutrients in them are more bioavailable

The truth is, many baked their own bread but if you baked more than usual in order to sell it, you probably would go to a bakers oven.

Not everyone would make beer either, certain households would make it and sell it.

Usually it was the milling that was centralized to tax grain from the farmers, for most people they would use a communal oven or a homemade one and people would brew beer when they wanted it (say for a festivity since it spoiled quickly. You only get centralized bakeries in urban regions.
