I've actually come around on chicken sausage as an adult. It's kind of like white wine. When you're a kid you think it's for the birds. Maturity is realizing it's actually kind of nice. But it does require more skill. Overcooking chicken sausage absolutely ruins them.

No.Fat is added to pork sausages, beef sausages, venison sausages and yes: chicken sausages, too. None are inherently low or high fat. Fat and flesh are run through the mincer separately and mixed together to get the right ratio and texture every time so again, whoever is making OP's sausages (and yours too, apparently) is making them in a way that they come out "delicate". If that means low fat, then there you go. Stop buying low fat sausages, ya dingus.
