What an absolutely ridiculous implication your assertion is making. Chicken sausages are inherently low fat and other sausages inherently higher fat? No.
Fat is added to pork sausages, beef sausages, venison sausages and yes: chicken sausages, too. None are inherently low or high fat. Fat and flesh are run through the mincer separately and mixed together to get the right ratio and texture every time so again, whoever is making OP's sausages (and yours too, apparently) is making them in a way that they come out "delicate". If that means low fat, then there you go. Stop buying low fat sausages, ya dingus.
