This is true. I buy shitty gas station mozzarella sticks regularly and I can tell when certain people are working the kitchen based on the texture. I actually worked there for a while (not kitchen) and the more experienced workers knew what defrosting/oven/fryer settings made the frozen slop way better than standard company policy.

mushrooms just have huge amounts of water in them that heat draws out of them. so unlike most user friendly bread and deep fry stuff you have big problems with both cooking them through and keeping the water inside
