sake, mirin, and shochu all use aspergillis in their production, for example. in cheese production, the chemical in rennet that we used to get directly from animal stomachs is now mostly produced from fermentation with e coli or aspergillis. the mold is killed after fermentation and the product doesnt contain any of it.
you consume more aspergillis niger just walking around your house breathing normal air. you can see it on produce on grocery shelves all the time. you've probably eaten it before and you're fine.

Call me full of shit but this stuff is fucking good. I miss when costco had a 2 for $6.99 deal it's so expensive now. I've tried to find an alternative but Melinda's just tastes weird and everyone else uses artificial truffle flavor. I'm tempted to try to make my own black truffle hot sauce with real truffle.
