Use that to thicken the sauce and you don't need butter it works perfectly. Ask a few dashes of Cholula and some kind of meat and you have a perfect meal.

>>22014155It's just unnecessary, I've tried it both ways and can't tell a difference. The pasta water does a good job thickening it and the cheese flavor is the main thing you taste. It also lets you control exactly how thick or thin you want it and it doesn't cool it down like milk and butter would unless you go the extra step to heat those as well. Also it's just easier and if you are being lazy it's all about saving steps.
