Made beef stew this week, wanted to share.2lbs chuck1 celery heart1 bag of baby carrots1 yellow onion2 cans of chickpeas1 carton of chicken stock1 handful of mushrooms 1 handful of baby spinach 1 handful kf spring mix1tsb vegetable oil3tsp salt3tsp black pepper3tsp garlic powder3tsp onion powder1.5 tsp smoked paprika .5 tsp cumin1tsp red pepper flakes1tsp mushroom powder.5tsp cayenne
> kf spring mixI've never done this before, don't the leaves get soggy?
>>22017277Normally yes, but if put in early to saute/deglaze pan all leafy greens disintegrate into nothing. Its the easiest way to eat my leafy greens in how they just dissolve into the fluid
>>22017411Interesting, so just a nutrition thing and not a flavor thing?
>>22017420For the leafy greens like the spring mix and spinach it is mostly for nutrition. Seeing how it's more or less all I eat for a few days(I actually made this sunday night) I find adding vegetables that melt into the dish helps me feel less like garbage for fhe days I eat it
>>22017268too watery.
Tried to post my own recipe, but 4chan wouldn't let me post
>>22017411Very cool, thanks for explaining
>>22017268i do this in a pressure cooker sometimes. 15 mins under pressure an its good.
>>22017268>1 handful of baby spinach>1 handful kf spring mixbut why?
My Beef Stew:>500 g beef (1.1lbs)>3 medium carrots>2 medium onions>2 slices celeriac (<= weight of carrots)>1/2 leek>1 small can peeled tomatoes >Tomato paste>1.2L beef stock>1/2 can Guinness beer (Guinness “Draught Stout” 4.2% ABV)>Olive oil for frying>Butter (neutral/mild)>Soy sauceSpices:>1 bay leaf>dried thyme>paprika powder + chili powderSteps:>Dice the vegetables.>Fry the meat in oil until brown on high heat>Add onions and fry on low heat until translucent>Add other vegetabels and fry on mid>Deglaze with butter and tomatoes>Add stock, soy sauce and spices>Add half of the Guiness can and drink the rest>simmer for 1-2 hours until meat is tender (depends on cut)
>>22017411Ok
>>22017268Very good stuff. Gonna make a big pot of stew soon.
>>22017268Looking good, OP. Might do a cornstarch slurry next time if you want it thicker. I like adding Worcestershire and Marmite to mine, makes it even more savory. Could also chop up an anchovy filet or do some tomato paste. I'd eat a bowl of yours in a heartbeat.
