food cost is a small percentage of restaurant pricing. but good restaurants will also include soup, salad, bread, cheese.

they also probably don't want a bunch of people going in there and just ordering the cheapest dish on the menu if it was much less than everything else.

Not necessarily. Salsa fresca/sciuèsciuè/"marinara" is literally four ingredients: olive oil (or lard; my area is well-known in Italy for its use of lard), garlic, tomatoes and parsley, in that order. Also salt. It takes fifteen minutes to cobble together and using good quality tomatoes, it tastes better than most sauces foreigners ape at. I will never understand why they have to overcomplicate things

This is why i never go to italian restaurants. The food is way too expensive for something simple i can easily make at home. Id rather eat simple food thats cheaper (like burgers or fried chicken), or more complex/unique food thats similarly priced.
