Any food science nerds out there? Please weigh in. I love pistachios but they must be salted.
How would I conceivably go about converting these to salted?

I was thinking a brief soak in salted water and then re-roasting. How do they do it at the factory?

You want to keep the shell on? If so salt solution might be the way to go, although I’m not sure if they just toss the pistachios with salt in a rotating drum in the processing facility

Shell them.
Put them in a container with a lid.
Add a tiny bit of oil of your choice.
Close container and shake lightly so they get coated.
Open container and add table salt.
Close container and shake lightly until all the pistachios are coated.

I wouldn't roast them again, they might start becoming bitter. 150-200F until they're dry should be enough without affecting flavor too much.

this is how you get soggy soft nuts. if you're gonna apply oil you need to apply heat too.

I like to eat them one at a time from the shell, so I'm looking to do get them salted without shelling. The oil seems like it'd work for getting salt to stick but I don't want to then touch them when snacking. But I appreciate the idea.

This was what I meant by 're-roasting'. As low as the oven goes just enough to dry them over 30 minutes or so.


I could just shell them and make pesto or something too. They're like $4 a bag and maybe even rancid by now because I think they're at least 18 months old. They were just sitting in a drawer as I pass them over for the salted ones I keep buying.
And now I get the salt and pepper ones in 3 lb bags.
This whole thing might not even be worth all the work. Or they may be the best fucking nuts anyone ever ate. Maybe I can douse them in teriyaki and chili oil and make something they don't even offer yet.

i was looking at sikil pak recipes recently, basically just pumpkin seeds blended with salsa. could probably do it with pistachio.

I haven't yet determined the best way to do it. Surely you're being deliberately obtuse here. But no, I've not nor will I be just putting dry salt on dry shell nuts as there's no way even a single grain would land and stay long enough to be eaten on the nut.
