Any food science nerds out there? Please weigh in. I love pistachios but they must be salted. How would I conceivably go about converting these to salted?I was thinking a brief soak in salted water and then re-roasting. How do they do it at the factory?

As low as the oven goes just enough to dry them over 30 minutes or so. I could just shell them and make pesto or something too. They're like $4 a bag and maybe even rancid by now because I think they're at least 18 months old. They were just sitting in a drawer as I pass them over for the salted ones I keep buying. And now I get the salt and pepper ones in 3 lb bags. This whole thing might not even be worth all the work. Or they may be the best fucking nuts anyone ever ate. Maybe I can douse them in teriyaki and chili oil and make something they don't even offer yet.
