I chopped up some carrots and peppers and they're okay but I need more ideas. I'm not a vegetarian but I find cooking meat to be annoying.

You could get real experimental and start adding fruit like melons. I don't think you could use spaghetti sauce though

What's your problem with cooking meat? Is it just handling raw meat?
If so, you could do canned fish or oysters, pre-cooked sausage, pre-made meatballs in the oven.
Once I made a bunch of calamari to add on top of my spaghetti, that was great. You could find frozen calamari to make in the oven though

Hot dog coins and beans. It's a traditional Latinx spaghetti. Very delicious but make sure you tortillas for scooping and making little spaghetti hot dog coin bean wraps.

Zucchini is a good call. Ragu used to make a sauce that had tons of veggies, more than their regular "garden" sauce, and I remember it had big chunks of zucchini. Good stuff.

I like pasta with chickpeas but it probably wouldn't work as well with spaghetti. You need a pasta that's a similar size as the chickpeas.

Ricotta cheese could work with spaghetti though. Makes it more filling and you don't really need meat.

You could add some fungi, i don't know the name but they don't look good but they have a lot of flavour and are dry...in Peru
