I chopped up some carrots and peppers and they're okay but I need more ideas. I'm not a vegetarian but I find cooking meat to be annoying.

If so, you could do canned fish or oysters, pre-cooked sausage, pre-made meatballs in the oven. Once I made a bunch of calamari to add on top of my spaghetti, that was great. You could find frozen calamari to make in the oven though

You can add food coloring to the noodle water to trick the brain into thinking there's other stuff there.
Pretty much all the squashes work. Zucchini and lemon is a favorite of mine. If you want to piss of Italians make an autumn spice butternut squash pasta.
